No need to break out the juicer: You’re off the hook here on this extra-simple recipe. Fresh pomegranate seeds add a welcome texture to this delicate, gorgeous Italian ice.
Makes approximately 3 cups
2 cups pomegranate juice
3 tablespoons acai powder
2 tablespoons maple syrup
1⁄4 teaspoon cinnamon powder
pinch cayenne powder
1⁄4 teaspoon guar gum (optional)
1 cup pomegranate seeds
Blend together the pomegranate juice, acai, maple syrup, cinnamon, cayenne, and guar gum. Pour the mixture into a sealable shallow container. Freeze for 1–2 hours, then remove from the freezer and stir with a fork to break the ice crystals apart and make a slush. Freeze for 2–3 hours longer, or until frozen through. To serve, scrape the surface with the prongs of a fork to form a ruby-red snow, gently toss with fresh pomegranate seeds, and transfer to serving cups or glasses.
Juice boost: Blend in 1 cup fresh or frozen blueberries before freezing.
